500 gms large Potatoes ( evenly sized )washed ,cleaned & dried
1/4 cup sliced, pitted Olives
2 cloves Garlic, fine chopped
1/2 teaspoon salt
1/2 teaspoon Pepper
1 teaspoon dried Oregano leaves
1/2 cup diced deseeded Tomatoes
1/4 cup crumbled Gouda cheese
2 tablespoons butter
1 small onion, chopped
200 gms fresh chopped broccoli,carrots, zucchini thawed
1/4 cup vinaigrette salad dressing
1 tablespoon vegetable oil
2 teaspoons dried parsley
salt and pepper to taste
- Preheat oven to 240 degree cel.. Pierce the skin of the potatoes with a fork. Microwave pierced potatoes on high for 05 minutes. Place partially baked potatoes in the preheated oven and bake for 10 minutes.
- Slice off potato tops, scoop out the bulk of the interior of the potato being careful to leave the potato skins intact. In a medium bowl, mash the removed potato interior.
- Heat on a small pan over medium heat, stir in butter. Saute garlic ,onions in the pan,until tender, about 5 minutes. Combine onions, deseeded tomatoes, broccoli, carrots,zuchinni ,olives broccoli, grated cheese and the dressing with the mashed potato. Brush the outside of the potato skins with oil. Spoon potato mixture into the skins.
- Arrange stuffed potatoes on a cookie sheet. Bake potatoes for 15 minutes in the preheated 240 degree cel oven, or until heated through. Season with salt, pepper, and parsley. Makes 4 – 6 pouches to be served
